About this Recipe
I first saw a recipe for zucchini nut bread in the Lifestyle section of The Star Newspaper/Malaysia (Sunday, 30 Jun 2019, Food p.5). I compared it to the ‘allrecipes’ version (little difference except for the absent sunflower seeds) and decided to feature them both to allow those who might be interested to make their own choice.

Zucchini Nut Bread

How to make super-moist and delicious zucchini bread, a quick bread that is so moist you will want to eat it up almost as fast as you can take it from the oven. As previously mentioned, for comparison, I have placed a link and video to V Monte’s top-rated recipe for Mom’s Zucchini Bread.
Ingredients
- 225 g zucchini
- 140g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp ground allspice or cinnamon
- 1/4 tsp fine salt
- 180g castor sugar
- 2 eggs
- 2 tbsp vegitable oil
- 2 tbsp plain yoghurt
- 2 tsp lemon juice
- 60g shelled sunflower seeds, toasted
Prepration
Pre-heat oven at 180C. Grease and base line a 20cm by 10cm loaf tin with baking parchment.
Coarsely shred zucchini. Place in a clean tea towel and squeeze until very dry.
Sift flour, baking powder, baking soda, spice, and salt together in a mixing bowel
In a separate bowl, combine sugar, eggs, oil, yogurt, and lemon juice. Gently fold into the dry ingredients together with the zucchini and seeds. Do not overmix.
Spoon into the prepared pan, level the top, and bake until golden brown and a toothpick inserted into the center comes out clean.
Cool in tin on a wire rack for 5 minutes. Remove cake from the tin, remove baking parchment, and then cool for a further 1 hour
