According to Wikipedia Hainan cuisine, or Hainanese cuisine, is derived from the cooking styles of the peoples of Hainan Province in China. The food is lighter, less oily, and milder seasoned than that of the Chinese mainland. Seafood predominates the menu, like prawn, crab, and freshwater and ocean fish are widely available.

According to The Star, the food specialties on Hainan island are different from the Hainanese cuisine we get here (Malaysia), and marked by the little use of oil in its cuisine.  This was certainly not true of the food prepared by the Pang Hainan Seafood Restaurant.  Though the dishes were tasty, noticeably was the predominance of oil used in cooking that remains visible in the final product served.  Differences are expected because seldom are restaurants able to provide the exact quality of an original cuisine though they may advertise as such.

Thai basil beef is a ‘must’ dish to order when dining in a Thai restaurant. The beef has an intense flavor that comes from the darker, richer sauce used bt the chef. Note that pad gra prow is actually made with a different kind of basil, referred to as holy basil.

The squid was fried in cooking oil with garlic and served with a spicy dip that pleased our taste buds. The squid was fresh and came with a signature “curl” because squid is more springy and succulent when curled. Also added was fresh red chili to give some heat and color.
